Paulette Goto left Utah (“No, I’m not a Mormon, yes I ski, and yes I watch Big Love—and yes that’s what life is like in Utah”), to pursue her dream of becoming a pastry chef. Once in New York City, she attended the French Culinary Institute, and upon graduation, landed a job at Le Cirque, where she met her husband, Ken. Paulette Martin Goto was born on August 22, 1972 in Sunnyvale, California. When she was 2 years old, her mother packed her along with her younger sister and older brother, drove to Salt Lake City, Utah and never looked back. No, they’re not Mormons. Paulette’s mother, single and raising three children in welfare, often left them to fend for themselves. In one of these mornings, Paulette discovered her love of cooking. In high school, she was making lollipops and selling them out of her closet. Suddenly, she was an entrepreneur.
At the age of 16, Paulette moved in with family friends who further fed her culinary and culinary obsession. She learned how to bake and decorate cakes and ended up becoming the high school girl for cakes. She even made a cake modeled in a cell for a biology task. While working alongside Jacques Torres, Paulette accomplished more than just perfecting her pastry skills… it was there that she met and fell in love with her husband, Le Cirque’s sous chef, Ken Goto. They married at Le Cirque in 2002 and enjoyed marital bliss ever since. Real story.

Paulette loved Le Cirque, but she had her heart set on baking. So she got an internship with the cake-decorating goddess, Colette Peters. A dream come true. Colette generously taught Paulette the ropes, which allowed her to develop her own style of decorating cakes. Working with Colette during the day and presiding over the Gap’s stock at night to earn a salary, Paulette was in heaven.

In 2001, Paulette left Colette to help her then boyfriend, Goto, open Jacques Torres chocolates. She did everything from construction, accounting and retail sales to making her own chocolate. After the company was able to hire outside employees, she turned her talents into helping to open a bakery in the West Village (the now-defunct Polka Dot Bakery), where she supervised special cakes.
